Ingredients:
1 tbsp Olive oil
1/2 medium purple onion chopped
1 Clove garlic, mince
2 Tomatoes diced
1 Can 8oz Tomato paste
1 tsp Cumin
1/4 tsp Cayenne pepper
1 tsp Salt
1/4 tsp Black pepper
3 eggs
1/2 tbsp fresh chopped Chives
1 pan
Method:
Chop all ingredients Onions, Chives, Tomatoes Diced and Tomatoes slices ahead of time to make cooking experience more Easy and Enjoyable.
Heat your frying pan for 1 minute. When the pan is hot add olive oil, onions and minced garlic. Let this simmer for 2 minutes on medium heat.
Add the freshly chopped Tomatoes on top of Onions and let it simmer for 30 Seconds without turning.
Stir the Tomatoes into the Onions let this simmer for 1 minute
Add 1 Can of Tomato Paste. Spread the paste to cover the chopped/simmered Onions and Tomatoes. Do not turn just let it sit on top for 2-3 minutes.
Add the Salt, Black pepper, Cayenne pepper and Cumin. Stir all ingredients and let it simmer in the covered pan for 2 minutes on a low heat.
Open the pan and crack 3 Eggs over the tomatoes sauce. Let this simmer open for 5 minutes on low heat.
Cover the pan for about 5 minutes on a medium heat. Open pan and gently take turn each egg over. Cover the pan and let it simmer for an additional 5 minutes.
Sprinkle the garnishes of chives and slices of Tomatoes over the Eggs and Sauce.
Servings for 3 each piece would have enough sauce to Enjoy.
