Ricotta & Spinach Pizza

Ingredients
Dough:
1 1/2 cups all purpose flour.
Kosher salt
1 teaspoon olive oil
1 tsp dry yeast
3/4 cup warm water
Sauce:
1/2 teaspoon dried oregano
4 plum tomatoes, cored and roughly chopped
1 can Tomato sauce
Toppings:
2 cups grated mozzarella cheese
One 6-ounce bag baby spinach, squeezed dry.
1/2 cup ricotta cheese
Directions:
For the dough: Let the yeast sit in the water for 10 minutes before using it to make the dough.
 Combine the flour,water and oil into a bowl and mix making the ingredients into a ball.
 You may need additional sprinkles of flour.
Mix and set into a ball. Let this sit for 1 hour before using.
For the sauce: Combine the oregano, Chopped tomatoes and tomatoes sauce in a bowl.
For assembling the pizza: Preheat oven to 480 degrees F. Stretch and/or roll each piece of dough until very thin and place it on your baking sheet.
Paste the tomato sauce on the dough. Add 1 cup mozzarella cheese, Spinach, additional mozzarella cheese & Ricotta Cheese.
Bake until lightly browned, 10 to 14 minutes ( check pizza since you may like your pizza less/more well done).
